Oxtail is the tail of the cattle.  Popular in old European cuisine also very popular Jamaican dishes.  

Oxtail takes a long time to cook, due to the amount of fat, bone, which makes it a perfect braising meat.  The result is a very rich, fall off the bone, gelatinous meat.
