Cupim, is a popular cut in Brazil. It comes from the Brahma/ Zebu Breed of cattle, which is popular in dry, desert like climate. This breed has a "hump" on its back to help it retain water in the drier climates of south america. This hump is where the cut "Cupim" is from. Cupim is a tender, rich, and marbled cut of meat. This meat cut is found almost exclusively in Brazilian cuisine. It's usually stewed or roasted in churrascos.
